- 2 c. whole milk
- 1/4 c. white vinegar
- 2 eggs
- 1/4 c. (1/2 stick) cooled melted butter
- 1/3 c. sugar
- 2 1/2 c. ap flour
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. baking powder
- white chocolate chips
- dried or fresh blueberries
- dried cherries or fresh strawberry slices
- softened butter
- powdered sugar
- optional: strawberry or blueberry syrup

Step 1
mix milk and vinegar together in a bowl and set aside for at least 5 minutes. whisk or sift together flour, salt, baking soda & powder in a bowl, set aside. add eggs to milk mixture and beat until well incorporated, then whisk in butter and sugar. with a spatula or wooden spoon gently fold in the flour mixture just until incorporated being careful not to over mix. mixture will still be a bit lumpy, that's okay. heat skillet or griddle over medium heat until a drop of oil sizzles. add about 2 tsp. of oil or butter to the skillet then scoop about a half cup of the mixture into pan. once the surface is covered in tiny holes sprinkle with white chocolate chips and fruit then gently flip over and brown the other side. top with butter and a sprinkle of powdered sugar or serve with strawberry or blueberry syrup.
