My daughter had friends over so I tried this cake on them without telling them what they were eating...Those boys ate half my cake in a matter of seconds. When I told them they were eating dates, they couldn't believe it.

Ingredients

  • Toffee Sauce:
  • 1 pound chopped dates
  • 3 1/2 cups water
  • 2 sticks softened butter
  • 3/4 cup sugar
  • 4 eggs
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 3 1/4 tablespoons of baking powder
  • Toasted chopped pecans (optional)
  • Toasted coconut (optional)
  • 1/2 lb butter
  • 1 cup brown sugar
  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla

Preparation

Step 1

Heat oven to 350*
Grease and flour 2 8" or 9" cake pans.

In a saucepan, boil dates and water.

Meanwhile, cream together the sugar and the eggs until light and fluffy.

Add the eggs to the batter and then 1 tsp vanilla.

Back to the dates: Add 2 tsp baking soda. (It will foam up)

Back to the batter: Add the flour and then the date mixture.
Lastly: Add 3 and 1/4 tablespoons of baking powder. I know it sounds strange. Pour into prepared pans. Bake 30 to 40 minutes.\

Toffee Sauce:

Put in pan and simmer until golden and clear.
Pour over cake after punching some holes in the cake for absorption.
