Start by mashing the banana in a bowl with a fork or a potato masher. The riper the banana, the sweeter the pancakes will taste, but you can really make these pancakes with bananas of any degree of ripeness. Next, crack an egg into the bowl. Just right on top of the mashed bananas. Stir it up! Use a fork or whisk to completely combine the egg and banana. That whole process should have taken 1-2 minutes. You could also throw the ingredients in a blender or food processor and pulse until smooth.

Now it’s time to cook the pancakes! Heat coconut oil or butter in a skillet over medium heat. Pour batter into skillet in small circles (smaller pancakes are easier to flip). Cook until you see bubbles forming and the edges start to cook. (This will not take as long as it does for typical pancakes.) Flip the pancake and cook through on the other side.

There are plenty of changes you can make to these pancakes to tailor them to your desires.

Use 2 eggs, instead of 1.
Add vanilla extract or cinnamon to the mixture for a little more flavor.
Add blueberries or chocolate chips.
Add a little baking powder (1/8 teaspoon) for fluffier pancakes.

There are also a variety of toppings to make these pancakes taste different each time you have them! Personally, I’m a big fan of spreading a tablespoon of nut butter on top of the pancakes, but you could also use maple syrup, honey, a fruit glaze (heat berries over low heat to let the juices out), or just a little bit of butter.
