Ingredients

  • 4 slices thick-sliced bacon, diced
  • 3/4 C diced red bell pepper
  • 1/2 C diced onion
  • 1/4 C dry sherry
  • 4 C fresh or frozen corn kernels
  • 1 C heavy cream
  • 1 tsp Tabasco sauce
  • S & P to taste
  • 1/2 C thinly sliced scallions

Step 1

COOK bacon in lg. skillet until crisp
drain all but 1 TBL drippings
add bell pepper & onion to skillet & cook over med-heat until soft, abt 5 min

DEGLAZE skillet w/ sherry, simmer until liquid newly evaporates, scraping up any brown bits
stir in corn, cream & tabasco - simmer until thickened, 3-4 min
season corn w/ S & P
stir in scallions
