Ingredients

  • Crust:
  • 1 1/4 cups flour
  • 3/4 cup graham cracker crumbs
  • 1/3 cup brown sugar
  • 1/2 tsp baking powder
  • 1 egg
  • 1/2 cup butter or margarine, melted
  • 3 cups miniature marshmallows
  • Topping:
  • 1 1/3 cups chocolate chips
  • 2/3 cup corn syrup
  • 1/4 cup butter or margarine
  • 2 cups crisp rice cereal
  • 1 cup dry roasted peanuts, coarsely chopped

Preparation

Step 1

Crust: Combine first 4 ingredients and make a well in the center. Mix egg and butter in small bowl. Add to well and mix until combined. Press into 9" x 13" pan, lined with greased foil, or parchment paper. Bake in 350 F for about 12 minutes, or until firm. Scatter marshmallows over crust. Bake for 1-2 minutes until just puffy.

Topping: Heat first 3 ingredients in large heavy saucepan on lowest heat, stirring often, until chocolate is almost melted. Do not overheat. Remove from heat, stir until smooth. Add cereal and peanuts. Mix well. Immediately spread evenly over marshmallows. Chill until firm. Cuts into 54 squares.
