Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 tablespoon Old El Paso Taco seasoning mix
  • 2 cans Pillsbury Grands Flaky Layers biscuits
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1 avocado , pitted, peeled and diced
  • 1 tablespoon chopped cilantro
  • 1 medium lime(1 1/2 tablespoons) squeezed
  • salt and pepper to taste
  • 1 1/2 cups shredded iceberg lettuce
  • 1/2 cup sour cream

Preparation

Step 1

heat oven to 350. Spray 9x5 in loaf pan with cooking spray.
In 12 inch skillet cook beef with taco seasoning over medium heat until browned.
Separate each can of dough into 8 biscuits; cut each into quarters. In a large bowl toss biscuit pieces with cook ground beef and cheddar cheese. Pour into loaf.
Bake 35 minutes or until golden brown.
Meanwhile in a medium bowl, toss tomatoes, onion, avocado, cilantro, lime juice and salt and pepper.
Cool bread in pan 5 minutes. Place lettuce on serving plate. Invert bread on to plate over lettuce.
top with sour cream and tomato - avocado mixture.
Serve immediately.
