Banana Bread - Revised 2/09 - with apples & spices

Ingredients
- OPT: Crumb topping:
- 1/2 cup oil
- 1 cup sugar
- 2 large eggs
- 3 or 4 ripe bananas
- 2 cups flour - AP or organic white whole wheat or combo of both
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons milk
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 cup craisins (or raisins)
- 1/2 cup Optional: nuts-toasted & chopped pecans or almonds
- OPT: from The Sweet Melissa Baking Book page 14: add sauteed chopped apple
- 2 tablespoons unsalted butter
- 3 tablespoons brown sugar, packed
- 2 granny smith apples, peeled, cored & cut into 1/2" pieces
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract

- 1/2 cup flour (2 1/4 oz)
- 1/2 cup light brown sugar (3 oz)
- 1/2 teaspoon salt (1/2 oz)
- 1/2 teaspoon cinnamon (1/2 oz)
- 1/2 cup almonds (3 oz), toasted & chopped
- 6 tablespoons butter, unsalted (3 oz), softened
- OPT: add choc chips to batter

Step 1
If using optional apples-see below; For regular banana bread:Mix together all except craisins, chips & nuts. Fold these in at end if using.
Pour into greased & floured pan (Angel food or bundt pans are good for even baking)
Bake at 350 for about 40- 55 mins depending on apn used or until golden & toothpick comes out clean
Can be made 1 1/2 times recipe & put into 9 x 13 pan for 40 mins
Do not over bake but make sure tooth pick comes out clean
For apple option: heat butter & brown sugar til bubbly, add apples & cinnamon & saute til tender; stir in vanilla, set aside to cool
Stir into banana bread mixture (including liquid) after mixiing all other ingred-omit choc
Using bundt or tube pan helps with even cooking-approx baking time: 44 mins
silicone mini muffin-makes 48 -bake for approx 16 mins
OPT: Crumb topping:
Combine dry ingred in processor, pulse 3 or 4 times, add butter & mix til crumbly.
Sprinkle over top before baking
