Ingredients
- 3 small English cucumbers
- 1 tsp Kosher salt
- 1/2 small red onion, thinly sliced
- 3 Tbsp olive oil
- 3 Tbsp white wine vinegar
- Freshly ground black pepper

Preparation
Step 1
Toss cucumbers with salt in a colander and let sit 15 minutes.
Mix cucumber with onion, olive oil, and vinegar. Season with salt and pepper and let sit 20 minutes.
