Ingredients

  • 1/3 pound bacon
  • 2 stalks celery
  • 2 onions
  • 1 pound chopped beef
  • 1 pound sausage meat-remove from casings
  • 2 cups rice, cooked in 4 cups chicken broth & cooled
  • 1/2 cup grated cheese-parmigiano, locatelli romano etc
  • seasonings- basil, parsley or italian seasoning blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cloves garlic
  • Italian style flavored bread crumbs (maybe 1/4- 1/2 cup)
  • 6 cups chicken broth-separated
  • olive oil
  • 1 cup milk
  • 4 cups chopped fresh mushrooms
  • finely chopped mozzarella
  • opt: chopped water chestnuts for texture & crunch

Preparation

Step 1

Saute 1 onion in olive oil, add raw rice & saute briefly; then add 4 cups low sodium chicken broth & cover, cook til done as per package instructions - add salt & pepper to taste & cool completely

Cut bacon into small pieces, cook til crisp. Remove from pan.
Saute 1 onion in bacon drippings til tender, add garlic & celery & continue to saute (Do not allow garlic to burn-it will become bitter)

Add crumbled ground beef, sauasage & seasonings, cook til almost browned, add mushrooms & continue cooking til done

Add bread crumbs, grated cheese & mix, add mozzarella; add chicken broth & milk til mixture is moist

Stuff loosely into turkey or bake in foil covered casserole, uncover to brown for a few mins
