Ingredients
- 1/4 cup soy sauce (used light)
- 2 tablespoons dry sherry
- 1/2 cup broth (chicken or vegetable) (plus extra to taste)
- 1/2 teaspoon sugar (plus extra to taste)
- 1 1/2 teaspoons grated fresh ginger
- 1 teaspoon grarlic, minced
- 2 tablespoons cornstarch + 2 tsp cornstarch
- 3 tablespoons water
- 1 egg white
- 2 pounds salmon (4 pieces)
- or 1 lb tofu sliced into steaks
- 1/4 cup sesame seeds
- 1/4 cup oil

Preparation
Step 1
Combine soy sauce, sherry, broth, sugar, ginger & garlic in small bowl
Combine 2 tsp cornstarch & water in 2nd small bowl
Whisk egg white & 2 tbs cornstarch together; brush the skinless side of salmon or all of tofu & dip in sesame seeds to coat
Pan fry til golden
Simmer & stir soy sauce mixture - add extra broth & sugar to taste-
whisk in cornstarch & water mixture to thicken,
Pour sauce around salmon or tofu
