Ingredients

  • 6 eggs, separated
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup potato starch
  • grated rind of 1 orange (about 2 tsp)
  • pinch salt
  • 1 tablespoon sugar for sprinkling + more for sprinkling

Preparation

Step 1

Beat sugar & egg yolks til light

Mix flour & potato starch, add to egg yolk mixture slowly

Add orange rind & mix well

Whisk egg whites with pinch of salt til stiff, fold into batter

Pipe 3" long strips onto cookie sheets buttered & dusted with potato starch

Sprinkle tops with sugar, let rest 5 mins
*Sprinkle w/sugar again (as per other recipes)

Bake on middle shelf of oven @ 300 degrees for 20 -25 mins til lightly golden

Cool on rack

Try using macaron method: from KA:
Bring sugar & water to 235-240
Beat egg whites to curved peak
Resume beating while adding syrup to egg whites, add extract
Continue beating til smooth, glossy & soft peaks
Fold in yolk mixture until everything is evenly combined.
Add flavorings or colorings if not already done.
Start stirring mixture. This will thin the mixture.
Stir until batter runs in ribbons that disappear back into mass in 10-20 seconds.
Test frequently & stop stirring when you reach this point.
Allow to rest in area with good circulation (counter top) until you can gently touch the tops & come away with a clean finger-20 mins - 2 hrs.
Preheat oven to 320
