Ingredients

  • Note: 1 cup cake flour = 1 cup AP flour minus 2 tbs AP flour & add 2 tbs cornstarch, sift together-see for directions on substituting AP flour for cake flour:
  • 3/4 cup egg yolks (8)
  • 2/3 cup sugar
  • 1 teaspoon grated orange peel - use more
  • 1/2 cup orange juice
  • 1 cup cake flour, sifted
  • 1 cup egg whites (8)
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 1 1/2 teaspoons lemon extract

  • Total flour = 1 cup cake flour
  • Total sugar = 1 1/3 cups
  • Bake at 325 for 70 - 75 mins

Preparation

Step 1

Beat egg yolks til thick & lemon colored; gradually add 2/3 cup sugar, beating til thick.

Combine peel, juice & extract, add to egg mixture alternating with flour.

Beat egg whites with cream of tartar & salt til soft peaks, gradually add 2/3 cup sugar, beating til stiff peaks.

Fold into yolk mixture

Bake in ungreased 10" tube pan at 325 for about 70 - 75 mins

Invert & cool
