Vegan Oatmeal Thumbprints  & Sesame Cookies* 0 Picture

Ingredients

  • 1 cup unsalted butter, room temperature (Smart Balance organic is vegan)
  • 1/2 cup & 2 tbs sugar
  • 2 teaspoons vanilla extract
  • 1 cup & 2 tbs flour (can use 1 cup white whole wheat & 2 tbs corn starch)
  • 1/4 teaspoon salt
  • 1 1/4 cups quick cooking oats
  • 1/2 cup raspberry or apricot jam
  • Option: Chopped & Toasted nuts or sesame seeds
  • *Sesame coated are very good

Preparation

Step 1

Preheat oven to 350', line pans with parchment

Cream butter, sugar & vanilla

Add flour & salt, beat til batter is light & fluffy

Add oats & beat on low 20 seconds

Roll teaspoons of batter into balls, roll in chopped & toasted nuts or seeds if desired

Place 1 1/2" apart on cookie sheet, make indentation in each with end of wooden spoon-(if putting jam in center)

Bake until light golden, about 11 mins, remove from oven-you may need to use end of wooden spoon to indent center again-& place 1/4 tsp of jam on center of each cookie. ( Or bake plain til light golden)

Put back into oven & bake til jam melts & spreads, about 5 more mins

Allow to cool
