Ingredients

  • 2 pounds ground beef & pork or turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon basil
  • 1/4 teaspoon parsley -more if using fresh parsley
  • 2 teaspoons salt - Diamond Crystal kosher-use less of other salts
  • 1/4 teaspoon pepper
  • 2 slices bread, soaked in milk (or 1/2 cup panko soaked in milk)
  • 2 eggs
  • 1/4 teaspoon italian seasoning mix
  • 1/8 teaspoon cayenne pepper
  • opt: 1/2 cup grated cheese-reduce salt if using
  • CHECK & ADJUST AMOUNTS

Preparation

Step 1

Mix bread & milk, let absorb; add seasoning ingredients, mix well
Add ground meat, mix all together but do not over mix

Make a small "burger" & cook in frying pan to check for seasoning-adjust if necessary
Use ice cream scoop to portion into balls, roll gently & place on foil lined sheet pan

broil or pan fry til golden;
Add to simmering tomato sauce
