Ingredients

  • 19 oz can garbanzo beans (Progresso is the best)
  • 1 small clove Garlic, cut in fourths
  • 1/2 tsp salt
  • 1 tbs Tahini (sesame paste)
  • Juice of 2 lemons
  • 2 tbs. Olive Oil
  • Parsley, chopped to garnish

Step 1

Reserve about 6 garbanzo beans for center decoration. Place remaining beans in blender or food processor, using some of the liquid, and all of the other ingredients except olive oil and the garnish.

Blend,adding more liquid as needed to produce a smooth but not soupy consistency. The texture should be firm, but not stiff.

Pour or ladle into a cut glass bowl or any pretty shallow bowl, garnish with parsley around the edge and reserved garbanzo beans.

Drizzle olive oil all over the top.

Serve warm with crackers, crusty bread etc.
