Ingredients

  • 2 cups canned crushed tomatoes
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1/4 cup carrot, shredded
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh basil, chopped
  • 1 tsp. salt
  • 1/2 tsp ground black pepper
  • 3 Tbsp. olive oil

Preparation

Step 1

1. Heat 3 tablespoons olive oil in a medium skillet over medium heat. Add garlic, onion and carrot and cook 3 minutes. Add crushed tomatoes and raise heat to medium high, let simmer 6 minutes until thickened a bit.

2. Stir in parsley, basil, salt and pepper and cook 2 minutes more.
