Ingredients
- 6 8 oz packages regular cream cheese
- 2 1/2 cups sugar
- 3/8 cup cornstarch
- 1 1/2 tablespoons vanilla extract
- 3 extra large eggs
- 1 1/8 cups heavy cream

Step 1
Preheat oven to 350. Grease 10"springform pan.
Beat on low until creamy, about 3 minutes: 1 pkg cream cheese, 1/2 cup sugar & cornstarch. Blend in rest of cream cheese.
Increase mixer speed to high & beat in remaining 2 cups sugar, then vanilla. Add eggs 1 at a time, beating well after each.
Blend in heavy cream only until just blended-do not over mix at this point.
Spread into pan, place pan in water bath coming up 1" high on pan
Bake until center just jiggles, about 1 hour. Cool on wire rack 1 hour, then refrigerate at least 4 hours.
