Ingredients
- 3/4 cup onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons chili powder
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon cumin
- 2 cups zucchini, chopped
- 1 cup carrots, chopped
- 1 28 oz can chopped tomatoes
- 1 14 1/2 oz can tomatoes (opt)
- 1 15 oz can kidney beans, undrained
- 2 15 oz cans kidney beans, drained & rinsed
- garnish: chopped onion, tomato, lettuce, peppers
- shredded cheese

Preparation
Step 1
Saute onion & garlic in olive oil til soft
Mix in chili powder, basil, oregano, cumin
Stir in zucchini & carrots til well blended, cook over low heat 1 min, stirring occasionally
Stir in tomatoes & kidney beans
Bring to boil, reduce heat & simmer 30 -45 mins or until thick
Pass garnishes
