Ingredients
- Streusel:
- 1/2 cup flour
- 1/2 cup packed light brown sugar
- 2 tablespoons granulated sugar
- 1/4 teaspoon cinnamon
- pinch table salt
- 4 tablespoons unsalted butter, cut into 8 pieces, softened but still cool
- Cake:
- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- 10 tablespoons unsalted butter, softened but still cool
- 2/3 cup granulated sugar
- 1/2 teaspoon table salt
- 1/2 teaspoon grated lemon zest
- 1 1/2 teaspoons vanilla extract
- 2 large eggs, room temp
- 4 cups blueberries-if using frozen, dry them off

Preparation
Step 1
Streusel: In mixer: combine flour, sugars, cinnamon, & salt til no lumps; add butter & mix resembles wet sand. Set aside.
Oven: 350, one 9" round cake pan, 2" high
Cake: Mix flour & baking powder, set aside
Cream butter, sugar, salt & lemon zest til light & fluffy, beat in vanilla, then eggs, 1 at a time.
Gradually add in flour, when all incorporated mix in blueberries by hand
Spread into greased pan
Form streusel into clumps by hand, break up clumps & sprinkle over over batter
Bake until deep golden brown & toothpick comes out clean, about 55 mins
