Ingredients
- 2 pounds black beans, dried (soaked-try not soaking first)
- 4 stalks celery, diced
- 2 carrots, diced
- 1 onion, chopped
- 4 cloves garlic, finely chopped
- thyme
- chicken or veggie base i used "better than bouillion" veggie base
- 5 tablespoons olive oil (approx 1/3 cup)

Preparation
Step 1
Saute onion, carrots, celery & garlic in 5 tbs olive oil
Add 1 gallon water & black beans. Add chopped fresh thyme or small sprinkle dried thyme.
Bring to boil, cook until beans begin to soften & soup begins to thicken.
Add 4 tbs veggie base & continue to cook, stirring occasionally to keep from sticking
