Ingredients
- 7 ounces almonds (1 1/4 cups)
- 3/4 cup ap flour
- 1/2 cup whole wheat flour
- 2/3 cup confectioner's sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted & cooled
- 2 tablespoons canola oil
- 2 teaspoons grated lemon zest
- 1 teaspoon fresh lemon juice

Preparation
Step 1
Oven to 350; butter & flour (2) 8" round pans
In food processor: combine nuts, flours, sugar & salt; pulse til nuts are finely ground but not oily
Add rest, pulse til comes together
press into 2 pans evenly, cut each into 8 wedges, prick with fork
Bake 22 mins til pale tan
cool pans on wire rack, recut wedges in pan
turn out onto wire racks to finish cooling
