Spicy Black Bean Soup

Ingredients
- 1 can black beans, divided
- 1 can petite diced tomatoes, divided
- 1/2 C Mexican light beer (Corona Light is what I had), divided
- 1/2 cup corn (if you can grill or dry roast it you get extra flavor points, but it's not necessary)
- 1 tablespoon chipotle seasoning
- 1 tablespoon cumin
- 1 tablespoon chopped pickled jalapenos
- 2 teaspoons garlic powder
- 1 teaspoon salt

Preparation
Step 1
Combine half of the black beans, half of the beer, and half of the tomatoes, and blend to a still-chunky consistency. I used a stick blender for this purpose, right in the pan. Your regular old blender or food processor (or a potato masher) will do.
Add to that all of the rest of the ingredients, simmer for 15 minutes to cook off the alcohol and warm thoroughly.
