Ingredients

  • 4-6 medium sized Yukon Gold or red skinned potatoes
  • 6 slices bacon, cooked crisp and crumbled
  • 4 green onions, thinly sliced
  • 1 c milk
  • 1-1/2 c sour cream
  • 2 c shredded cheddar cheese
  • salt and pepper to taste
  • 1/4 c Panko crumbs
  • 3 T butter, melted

Preparation

Step 1

Boil potatoes, until just tender but not cooked all the way through, about 20-25 minutes. Drain, cool, peel, and cut into 1/4 inch thick slices.

Preheat oven to 350.

Stir milk into sour cream and season with salt and pepper. Spread half the mixture over the potato layer and then sprinkle with half the cheese and some of the green onions. Season with salt and pepper. Repeat layers.

Bake for 40 to 45 minutes until browned.

Top with bacon and additional green onions
