Beef: Prime Rib

This is the only and best way to cook this meat. Make sure to leave the roast out until it reaches room temperature, for about 2 hours on a 3 rib prime rib. It is also important to put your roast in a pan with a v-rack so that you can put water in the bottom of the pan to keep it from smoking up the house.

- 3 rib prime rib of beef (oven ready) *about 7 to 8 pounds
- kosher salt
- fresh ground pepper

Step 1
Preheat oven to 500*
Place the oven rack on the second lowest position.
Place the roast bone side down in a large nonstick roasting pan with a v-rack and put enough water in the bottom of the pan without touching the roast. Generously sprinkle salt an peper over the top of the roast.
Place in the 500* for 45 minutes.
Then leaving the roast in the oven, lower the oven to 325* and roast for another 30 minutes. Finally, increase temperature to 450* and roast for another 15 to 30 minutes, until the internal temperature is 125*.
Remove roast from oven and transfer to cutting board and cover with foil and let rest for 20 minutes.
DON'T LEAVE COVERED FOR MORE THAN 30 MINUTES OR THE MEAT WILL KEEP COOKING.
