Ingredients
- 1/4 cup light butter
- 1/4 cup sugar
- 1/3 cup cocoa
- 1 egg
- 1 cup low fat graham cracker crumbs
- 3/4 cup rolled oats
- 1/2 cup unsweetened coconut
- 1/4 cup chopped walnuts
- 1 tsp. vanilla
- 4 tsp. light butter
- 1 tbsp. fat free milk
- 2 cups sifted powdered sugar
- 1/2 tsp. vanilla
- 2 oz. bittersweet chocolate
- 2 tsp. light butter

Preparation
Step 1
Line a 9" square baking pan with plastic wrap. Melt 1/4 cup light butter in a saucepan over medium heat. Add sugar, cocoa, and egg. Cook 1 minute. Stir in graham cracker crumbs, rolled oats, coconut, chopped walnuts and 1 tsp. vanilla. Pat the mixture into bottom of the pan. Freeze for 30 minutes or until firm. Beat 4 tsp. light butter, milk and powdered sugar. Add 1/2 tsp. vanilla. Spread over the crust and chill for 15 minutes. Microwave chocolate and 2 tsp. light butter for 10 seconds. Stir and spread over filling. Chill 2 hours. Cut into 20 bars.
