For sweet plantains make sure to use ones that are dark yellow in color or even black. Peel the plantain as you would a banana. Slice the plantain in discs or length wise for strips. I personally prefer thicker strips (than pictured) about a 1/4" thick as you not only get the crispy effect but also the softer texture of the sweet insides as well. Feel free to slice them thinner for even crispier plantains. Preheat the oil over medium heat and fry the plantains until they are golden brown on both sides. Remove from pan and place on a paper towel to absorb excess oil and serve.
