Ingredients

  • 2 lbs. fresh spinach or 3 10 oz. boxes frozen
  • 1/4 cup chopped onion
  • 1/4 cup butter
  • 3 eggs
  • 1/2 lb feta cheese, crumbled
  • 1/4 cup parsley
  • 2 Tbsp chopped fresh dill
  • 1/2 tessp. salt, dash pepper
  • 1 box phyllo dough
  • melted butter for phyllo dough

Preparation

Step 1

Cook spinach in boiling water and drain. Saute chopped onion in butter until golden (3 mins.), then add spinach

In a large bowl beat eggs, add feta cheese, parsley, dill and salt and pepper.

Line a 13x9" pan with 6 layers of phyllo dough, brushing each with melted butter.

Pour filling into pan . Add 8 more layers of dough and butter. Cut into diamonds.

Bake until golden 35-40 mins.
