Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. coconut oil
  • 1 c. granulated sugar
  • 1 c. brown sugar, packed
  • 3 large eggs
  • 3 tbs. coconut butter
  • 2 tsp. coconut or vanilla extract
  • 1 c. sweetened shredded coconut
  • 1 c. white chocolate chips
  • 1 c. chopped macadamia nuts
  • 1 1/2 c. powdered sugar
  • 1 tsp. coconut extract
  • 1/2 c. shredded coconut

Step 1

Preheat oven to 350°F, grease a half size baking sheet with bakers release spray.

Sift together in a bowl the flour, baking powder and salt, set aside. With a mixer beat together coconut oil, eggs, sugars, and extract on medium-high speed to cream until light and fluffy. Stop, scrape down the sides of the bowl, and add dry ingredients and mix until just combined. Fold in the coconut, white chocolate chips and nuts. Spread evenly on prepared baking sheet and bake for 25-30 minutes or until golden brown and set, being careful no to over bake. While still warm prepare the glaze by mixing powdered sugar, coconut extract and enough hot water for a thick drizzling consistency. Glaze bars and finish the top with more shredded coconut. Allow to cool then cut into bars.
