Ingredients
- 3 medium onion - chopped
- 2 mediam bell pepper - chopped
- 6 celery stalks - chopped
- 2 cloves garlic - chopped
- 2 sticks butter
- 3 lbs. crawfish/shrimp boiled & chopped
- 1/2 cup green onion - chopped
- 1 cup parsley - chopped
- 1/4 teaspoon cayenne pepper
- 2 cans Cream of Shrimp Soup
- 1 cup of Cream of Mushroom Soup
Preparation
Step 1
Saute onion, pepper, celery, and garlic in butter until tender. Add soup, and bring to a boil, reduce heat and cover. Simmer for 45 minutes, stirring often (it burns easy). Add crawfish, green onion and parsely. Continue to simmer 20 minutes.
Serve over rice.
