Preparation
Step 1
Spray grill rack or grill pan with nonstick cooking spray. Preheat to medium heat. If using wooden skewers to secure rolls, soak 4 small wooden skewers in water 15 minutes.
Place turkey cutlets in a single layer between 2 sheets plastic wrap. With a mallet or rolling pin, lightly pound to 1/8 inch thickness.
Spread 1 tablespoon of the cheese on each turkey breast. Sprinkle evenly with pepper. Place 8 asparagus spears crosswise on each cutlet and roll up. Place 3 sage leaves on each roll and then wrap with 2 slices proscuitto. Secure each roll with a toothpick or wooden skewer.
Place rolls on grill and cook, covered, turning occasionally, until turkey is cooked through, 12-14 minutes.
Transfer to a cutting board, remove toothpicks or skewers and serve immediately.
