Spring Onion & Smoked Salmon Frittata

This recipe transforms the favorite pairing of smoked salmon and cream cheese into a delicious frittata, which also includes green onions and fresh chives.

Ingredients
- Pam cooking spray
- 6 green onion, thinly sliced
- 6 eggs
- 3 tablespoons heavy cream
- 3 ounces smoked salmon, cut into 1 inch pieces
- 2 ounces cream cheese, cut into 1/2 inch cubes
- Salt and freshly ground pepper, to taste

Preparation
Step 1
Preheat oven to 375°F.
Spray 9-inch frying pan with Pam spray. Add the green onions and cook, stirring occasionally, until soft and golden.
In a bowl, whisk together the eggs and cream. Stir in the smoked salmon, cream cheese, salt and pepper. Pour mixture into pan and stir to mix in the green onions. Transfer to oven and bake 18-20 minutes.
Remove from oven and let set for 5 minutes. Cut into 6 slices and serve with fresh pineapple.
