  • 1/2 orange, freshly squeezed (about 1/2 c)
  • 6 limes, freshly squeezed (about 1 c)
  • 1/2 T salt
  • 1/2 T hot pepper sauce
  • 1/2 lb white fish
  • 1 c diced red pepper
  • 1 c diced red onion
  • 1 c diced plum tomatoes
  • 1 c diced celery (stalk and leaves)
  • 1 diced jalapeno (usually increase)
  • 1/4 tsp white pepper
  • 1/2 tsp black pepper
  • 1/4 c chopped cilantro leaves



Step 1

Juice the orange and enough limes to measure 1.5 c. Add salt and hot pepper sauce to juice and set aside. Cut the fish in bite sized peices and marinade in juice. Chop next 5 ingredients and place in bowl. Mix in fish and juices. Marinate for 30 minutes or until fish is opaque white. Mix in pepper and cilantro just before serving. Serve with tortillas or crackers.
