Ingredients

  • 4 cups pecans
  • 1/4 cup flour
  • 1 lb candied cheerries
  • 1 lb candied pineapple
  • 1/2 lb butter
  • 1 cup sugar
  • 5 large eggs
  • 1 3/4 cup flour
  • 1/2 t baking powder
  • 2 oz vanilla extract
  • 2 oz lemon extract

Preparation

Step 1

Chop fruit and nuts (medium) and mix with 1/4 cup flour
Cream butter and sugar.
Add well beaten eggs and blend.
Sift flour and baking powder.
Fold into egg mixture.
Mix in extracts.
Add fruit mixture.
Grease a 10 inch tube pan or 2 loaf pans.
Line with foil or wax paper.
Grease again.
Place in a cold oven and bake at 350 degrees for 3 hours or 2 hour if in loaf pans.
Cool in pans.
Substitute 3/4 dried apricots soaked, cooked, saving 1/4 cup of the juice for the pecans.
Don't dredge in flour.
Check cake 1 hour before the end of baking.
Cake should be moist and sticky.
Saturate cloth with rum or apple cider if desired.
