Ingredients
- 1 (4 lb) beef brisket, trimmed of fat and silver
- 1 medium onion, thinly sliced
- 1 (12 oz) can or bottle of beer
- 1 (12 oz) bottle of tomato based chili sauce
- 3/4 cup packed brown sugar
- 1/2 cup tomato ketchup
- 6 to 7 cloves of whole garlic

Step 1
Preheat oven 300*
Season the brisket on all sides with salt and pepper, and place in baking pan with lid to cover. Cover the layer of sliced onions and garlic. In a medium bowl, mix together the beer, chili sauce, and ketsup and brown sugar. Pour over the roast. Cover the dish tightly with lid or foil.
Bake 3 hours. Remove the aluminum foil or lid, and bake for an additional 30 minutes. Let the brisket rest and cool slightly before slicing and returning to dish. Take the sauce into a saucepan and reduce until thickened. Reheat the brisket in the oven with the sauce spooned over the sliced meat.
