Ingredients

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease or lightly spray bottom only of 13x9-inch pan. Add enough water to drink mix to measure 1 1/4 cups.
  • 2 In large bowl, beat cake mix, drink mix, oil and egg whites with electric mixer on low speed 2 minutes. Pour into pan. Bake and cool and directed on box for 13x9-inch pan.
  • 3 Gently stir lime peel into whipped topping; spread over top of cake. Garnish with strawberries. Store covered in refrigerator.

Chocolate frozen whipped topping also makes a great "frosting" for this dreamy cake. Stir orange peel instead of lime into the chocolate topping.

This was the first time I made the cake so I made the actual cake exactly how it says to make it. I let it cool for about 20 minutes then I took the bottom of a wooden spoon and poked holes all over the cake about an inch apart. The cake wasn't strawberry enough to me so I poured some extra margarita mix all over the unfrosted cake, covered it, and put it in the fridge for about 2 hours to let it soak in. The longer you leave it, the better it will be. When the cake cooled down, I made the frosting the same way, but I also added a container of Yoplait Key Lime flavored yogurt to the whipped topping along with the zest. The lime flavor was still pretty subtle so I definitely think this is a much needed step as the whipped topping with the zest is not "limey" enough. The cake was awesome and moist and the flavors worked very well together. Everyone loved it, to include myself :) I think next time I will actually puree some strawberries and sugar and pour it on instead of the margarita mix, but the mix was still pretty darn good. The three spoons were for the original recipe. After changes, it would be a 5.

This is a super easy cake to make. I used one Betty Crocker white cake mix, 3 egg whites, 1/2 cup water, 1/3 cup oil, 3/4 cup margarita mix and stirred until blended. I baked it in a preheated 350 degree oven for 30 minutes then cooled on a baking rack for about an hour. I then topped it with thawed whipped topping. I think my husband and I will fight over eating this one! Made it right before Valentine's Day and took some to my daughter at college. Of course she devoured it; she's a college student!
