Ingredients
- Jerk rub:
- 1/2 cup minced onion
- 2 tsp sugar
- 1 jalapeno pepper, seeded and sliced
- 1/2 tsp coarse-ground black pepper
- 1/3 cup peeled, chopped pineapple
- 1 clove minced garlic
- 1 T cider vinegar
- 1/4 tsp red pepper flakes
- 1/4 tsp thyme
- 1/4 tsp ground allspice
- 1/4 tsp ground coriander
- Chicken:
- Nonstick cooking spray
- 4 small chicken breasts
- 4 slices fresh pineapple
- 2 T lime juice
- 4 tsp light brown sugar

Step 1
For the jerk rub, blend rub ingredients in a food processor. Rub over chicken. Place in shallow bowl and refrigerate for 2-4 hours.
Spray a grill rack and adjust it on a grid over ashen-hot coals. Put chicken on rack. Cook 10 minutes, turning as needed once or twice. Grill until chicken is cooked through but not overcooked.
While chicken is grilling, cook the pineapple. Sprinkle it with lime juice and brown sugar. Grill about 2 minutes on each side. Serve chicken with pineapple.
