Ingredients
- 1 1/2 lb broccoli, chopped
- 24 oz boneless, skinless chicken breasts
- salt and pepper
- 1 tablespoon margarine
- 2 1/2 teaspoons olive oil
- 2 cloves garlic, crushed
- 2 tablespoons minced shallot or onion
- 1/4 c. flour
- 1 c. chicken broth
- 1 c. skim milk
- 1/4 c. dry sherry or white wine
- 6 oz. shredded swiss cheese
- 1/4 c. grated parmesan
- 1/4 c. seasoned whole wheat bread crumbs

Step 1
Bring a large pot to a boil. Add broccoli and blanch 3 minutes. Drain and rinse with cold water. Spray a 9x13 baking dish with cooking spray.
Season chicken with slat and pepper. Spray a large skillet with cooking spray and heat over medium heat. Cook chicken until browned and almost cooked through. Remove from heat and transfer chicken to cutting board. Slice chicken into bite size pieces.
Warm a medium skillet over medium heat. Add butter and 2 tsp. oil, heat until butter has melted. Add garlic, shallots and saute until tender. Sprinkle flour over mixture and whisk until incorporated. Stir in broth, milk and sherry- bring to a boil. Remove from heat and stir in half of the swiss cheese. Season with slat and pepper.
Arrange broccoli in baking dish and pour half of the sauce on top. Arrange chicken on top and cover with remaining sauce. Sprinkle with reamaining swiss and parmesan. Top with bread crumbs. Drizzle with 1/2tsp. olive oil.
Bake at 350 degrees for 30 minuts or until browned on top.
