Blueberry Surprise French Toast Casserole 1 Picture

Ingredients

  • 12 slice dry white bread, cut into 1/2" cubes (about 8 cups)
  • 2 pkg. (8 oz.) cream cheese, cut into 3/4" cubes
  • 1 cup fresh or frozen blueberries
  • 12 eggs
  • 2 cups milk
  • 1/2 cup maple syrup

Step 1

Put half of the bread cubes in bottom of well buttered 3 quart rectangular baking dish. Sprinkle cream cheese cubes and blueberries over bread cubes. Add remaining bread cubes over blueberries. In large mixing bowl, beat eggs. Beat in milk and syrup. Carefully pour egg mixture over bread mixture. Cover dish with plastic wrap and chill for 2 to 24 hours. Preheat oven to 375 degrees. Remove plastic wrap and cover dish with foil. Bake for 25 minutes. Uncover and bake about 25 minutes more or until knife inserted near center comes out clean and topping is puffed and golden brown. Let stand 10 minutes before serving. Serve with warm syrup.

Note: To dry bread, arrange in single layer on wire rack. Cover loosely and let stand overnight or cut bread into 1/2 inch cubes, spread in large baking pan and bake uncovered in 300 degree oven for 10 - 15 minutes, stirring twice.
