Coconut Chicken or Shrimp

Ingredients

  • 3 eggs lightly beaten
  • 3 tbs. coconut milk
  • 1 cup flour
  • 2 cups unsweetened flaked coconut
  • vegetable oil for frying
  • 20 large shrimp or
  • chicken cutlets

Preparation

Step 1

Beat eggs with coconut milk.

Dredge in flour, then egg, then coconut and transfer to oil.

Fry until golden.
