Ingredients
- 2 2-1/2 to 3 lb broiling chickens, halved.
- 1/4 cup chopped Italian parsely
- Lemon Sauce
- LEMON SAUCE
- 2 cups fresh lemon juice
- 1 cup extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 1/2 tsp minced garlic
- 1/2 tsp dried oregano
- Salt & Pepper to taste

Preparation
Step 1
Broil chicken halves, turning once, for about 30 mins or until skin is golden brown and juices run clear.
Remove chicken from broiler, leaving broiler on. Using a very sharp knife, cut each half into about 6 pieces.
Place chicken on baking sheet with sides that can fit into broiler. Pour Lemon Sauce over chicken and toss to coat well.
Return to broiler and broil for 3 mins. Turn each piece and broil for an additional minute.
Pour sauce into a heavy saucepan. Stir in parsley and place over high heat for 1 minute. Pour sauce over chicken
LEMON SAUCE:
Whisk together juice, oil, vinegar, garlic, oregano and salt & pepper. Cover & refrigerate until ready to use. Shake well before using.
