Ingredients

  • 1 1/2 pounds chicken, cut into 1 inch pieces
  • 2 tablespoons butter or olive oil
  • 1 small chopped onion
  • 1 clove garlic
  • 2 tablespoons curry powder
  • 3 tablespoons flour
  • 1 can (14 ounce) chicken broth
  • 1 large apple, peeled, cored and diced
  • 1/2 cup cream

Step 1

In a medium pot, sauté the onion, garlic and curry powder in the butter until onions are clear. Add flour and stir until smooth. Slowly add the chicken broth to the flour mixture, stirring until blended. Add the apple and chicken and cook for 1 hour on low heat. You can add some hot sauce to the mixture (approx. 1 tsp), if desired. Add the cream and heat thoroughly but do not bring to a boil.
Serve over basmati rice with chopped bananas and peanuts.
