  • lobster claws, shelled and sauteed in the butter sauce
  • zucchini julienned
  • lemon
  • sage

Preparation

Step 1

cook the ravioli to directions, drain and keep warm
before serving, they can be cooked for a few minutes in a skillet with a small amount of butter being careful to not break the pasta dough shell in the handling

meanwhile make the sauce of butter, lemon juice and sage (fresh if available) and add the shelled claws and the shredded meat removed from the knuckles ( the shelling can be done ahead of time) and the julienned zucchini
to assemble the dish, arrange the ravioli on the dish, place a claw on top and a sprinkle of the lobster bits, then spoon the sauce over and serve immediately, with a sprinkle of parsely
