Ingredients

  • 1 lb of your favorite pasta cooked to your liking
  • Olive Oil – 3 turns in pan
  • 1 onion cut in quarters
  • 2 28 oz cans Italian Plum Tomatoes (San Marzano)
  • 2 cloves garlic, smashed
  • Salt & Pepper to taste
  • Fresh Basil
  • Fresh Mozzarella, cut into cubes approx. 1/2” big

Preparation

Step 1

Boil water for pasta.

In a sauce pan, heat the olive oil, add onion quarters and garlic. When garlic is brown, add tomatoes and fresh basil. Add a ladle full of the pasta water and cook for 15 mins. Break the tomatoes up with a wooden spoon. Take out onion and throw out.

When pasta is cooked, drain and put back into pasta pot on shut off burner. Add sauce and stir. Add more chopped fresh basil and mozzarella. Stir and serve.
