  • 1/4 c butter
  • 1 1/2 c diced crimini mushrooms
  • 2 shallots, diced- 1/4 cup
  • 1 1/2 c veg broth
  • 1/2 c almond milk
  • 1 tsp xanthan gum

Preparation

Step 1

melt butter in medium saucepan over medium heat. add mushrooms and shallots and cook until soft, about 5 minutes.
stir in broth and milk. bring to a boil, reduce heat, and simmer 10 minutes. until mixture thickens. sprinkle xanthan gum over top and whisk well. simmer 8-10 minutes more until mixtures is thick and creamy. season with slat and pepper.
