Ingredients
- 1 1/2 sleeves Ritz crackers (50 crackers) pulsed in a food processor to coarse crumbs
- 2/3 cup milk
- 2 large eggs
- 1/2 cup mayo
- 8 slices hearty white sandwich bread
- 6 slices American cheese
- 3 to 4 quarts vegetable oil

Step 1
1. Spread cracker crumbs in shallow dish. Whisk milk and eggs in medium bowl. Spread 1 tbsp mayo on one side of each slice of bread. Arrange 1 1/2 slices of cheese on 4 of the slices of bread and top with remaining 4 slices bread, with the mayonnaise side facing the cheese. Cut each sandwich diagonally into quarters. Dip sandwich quarters into egg mixture, then coat with cracker crumbs, pressing to adhere. Place on a parchment lined baking sheet and refrigerate for 1 hour.
2. Pour oil into large Dutch oven until it measures 2" deep. Heat oil to 375F over medium high heat. Fry half of the chilled sandwich quarters until golden brown on both sides, 2 to 3 mins. Transfer sandwich quarters to a paper towel lined plate to drain briefly. Repeat with remaining sandwich quarters. Serve.
