The Ultimate Cheesy Potatoes

Ingredients
- 2-3 lbs red potatoes, cubed 1/2″
- 1/4 c. unsalted butter
- 1/4 cup fresh parmesan cheese
- 3/4 c. monteray jack cheese
- 3/4 c. cheddar cheese
- 1 garlic clove, minced
- 1/2 T green onion (a little goes a LONG way)
- 1/4 c. whole milk
- several grinds of black pepper
- 1/2 tsp or so of sea salt
- 1/2 tsp paprika
- 4 slices bacon (uncured!!)

Preparation
Step 1
Place cubed potatoes in a large pot filled with water. Boil until potatoes are JUST fork tender (don’t want them too soggy).
Preheat oven 350 degrees and lightly oil a 9 x 9″ baking dish with olive oil.
While potatoes boil, prepare bacon in skillet. Pat dry and crumble. Set aside.
Melt butter in a saucepan and when potatoes are done and drained, pour over potatoes.
Combine grated cheeses (reserving 2 T parmesan cheese), garlic, onion, milk, salt, pepper, and paprika in a separate bowl. Pour over potatoes. Mix well. Cheese should melt beautifully!
Pour into prepared dish. Sprinkle with bacon and parmesan cheese. Bake for ~30 minutes.
I love to see an RD post a HIGH FAT and decadent meal every once in a while!!! This sounds amazing! And of course, I will practice eating in moderation if I make this
