- 4 chicken breasts, cut into chunks
- 2 eggs
- 1 cup grated parmesan cheese
- 1 cup almond meal
- seasonings of choice
- oil for pan frying

whisk the eggs. Dip the chicken in the eggs and then roll in the breading. Place on a cookie sheet lined with parchment paper or wax paper. Freeze, it helps crust adhere better. Lightly pan fry them to a golden color. Then place them on a cooling rack on a cookie sheet and bake them at 350 until temp measures 165 about 15 minutes.
