Stuffed Zucchini-Mom's

Ingredients

  • 6 zucchini cut lenghtwise, scoop out seeds
  • 1 lb. sausage
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 1/3 c. minute rice
  • 1 c. hot water
  • 1 8oz. can tomato sauce
  • 1 t. salt
  • 1/8 /t. pepper
  • 1/2 c. grated cheese

Preparation

Step 1

SAUTE SAUSAGE, RESREVING FAT. TRANSFER TO ANOTHER DISH. IN 1/4 C. FAT, COOK ONION AND PEPPER. ADD RICE AND COOK UNTIL BROWN. ADD SAUCE, WATER, SALT AND PEPPER. BRING TO BOIL, COVER AND REMOVE FROM HEAT. LET STAND 5 MINUTES. STIR IN SAUSAGE AND CHEESE. SPOON MIXTURE INTO ZUCCHINI. WRAP IN FOIL AND BAKE 45 MINUTES IN 350 OVEN.
