Jewel Roasted Vegetables
- 4 medium beets
- 3 tbsp olie oil, dividedd
- 1 1/2 lbs carrots
- 1 1/2 lbs brussel sprouts
- 8 large garlic cloves
- Salt and pepper
- 1 tbsp chopped thyme
Preheat oven to 375. Put beets in a small baking dish and rub them w/a tbsp of oil. Cover the dish with foil and put in oven for 30 minutes.
In the meantime, peel and cut carrots into 1 in. pieces, trin brussel sprouts and halve them and peel the garlic. Put all three in a large baking dish and tolls with oil. Sprinkle with salt and pepper.
After the beets have been cooking for 3o minutes, add the pan of veggies to the oven and cook everything for an hour more, stirring vegetables once or twice.
Remove the beets from the oven, and let cool. Stir thyme into veggie mixture and let cook for another 10 minutes. Peel beets and cut into 1 in pieces. Toss with over veggies, salt and pepper.
