Ingredients
- Dry Ingredients: (Mix together)
- 2 Cups Flour
- 1-3/4 Cups Sugar
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- Wet Ingredients: (Beat together with a fork)
- 1 Cup Oil (Wesson, Canola, Safflower)
- 1 Teaspoon Vanilla
- 3 Eggs
- 4 Medium to Large Granny Smith Apples-Peeled, cored and cut into small chunks (not slices)
- 1/2-3/4 Cup Chopped Pecans
- Butter or Shortening to grease 2 - 9" cake pans

Preparation
Step 1
Add liquid ingredients to dry. Mix with wooden spoon or spatula. Mixture will be very thick and will easily stick together.
Add chopped pecans to mixture.
Stir in apples (mixture will be very thick).
Spoon equal amounts into each greased & floured pan. Spread with a spatula to even out.
Put in preheated 350 degree oven.
Bake for 45-50 minutes.
